Elemental Custard

I trekked up to my cottage for the weekend with a few friends. Totally relaxing. I meant to take more photos, but I couldn't hold my camera AND a mojito at the same time. It was a major problem. The mojito won.

Mojitos...

Favourite. Drink. Ever.

Now mojitos are wonderfully delicious. Want to know how to make them even better? Add raspberries. Raspberries are delicious. Mojitos are delicious. I'm a genius (I'm totally going to take credit for this).

After a stressful week, it's great to sit out on the dock for the long weekend and relax.

I decided to use honey to sweeten these drinks plus since you can never have too much mint, I infused the syrup with mint leaves to make it extra delicious.

Don't drink liquor? Too young? (poor you)- Make some virgin mojitos! (Almost as good).

Recipe: Raspberry Mojitos with Mint Honey Syrup

Per Drink

Ingredients:


Honey-Mint Syrup- makes enough for ~4 mojitos (or use a few tsp of sugar if you are feeling lazy:
1/2 cup honey
1/2 cup water
~10 fresh mint leaves

Mojitos:
1 oz white rum (bacardi or other)
1-2 tbsp honey-mint syrup (to taste, or use sugar to taste)
5-8 mint leaves
4 ice cubes
4 raspberries (optional)
2 tsp lime juice
~ 1 cup club soda
lime wedges for garnish

Method:

Honey Mint Syrup (makes enough for 4 mojitos): In a saucepan, combine 1/2 cup honey or agave nectar with 1/2 cup water. Add ~10 fresh mint leaves and bring to a boil stirring occasionally. Simmer for 5 minutes. Strain the mint leaves out before letting cool so it is lukewarm before pouring into your drink.

Mojitos: In a tall glass, muddle the mint leaves (aka smush with something). Pour in 1-2 tbsp of syrup (or to taste). Place ice cubes in the glass interspersed with the raspberries, the 1 oz of rum and top with club soda and lime juice. Stir carefull with a thin stir stick (or opposite side of a spoon). Garnish with lime wedges and relax with your mojito ideally next to a pool or on a dock.
