Elemental Custard

Recently I have been trying to recreate dishes that traditionally use ground beef into using chicken or turkey! Not to say you shouldn't eat beef, I just strongly believe that you should limit your intake of red meat to only once in a while and consume leaner proteins more often like chicken and fish.

I already made a lovely Turkey and Chicken Chilli which turned out wonderfully. So now I am on to meatballs since I had an unexpected craving for pasta.

Next on the list, pasta from scratch! I've ordered the KitchenAid pasta attachments for my mixer however they are yet to come in so until then, I will have to make do with store bought pasta. Such is life!

Recipe: Baked Chicken Meatballs

Makes: ~32 (25g) meatballs

Ingredients:

1 lb ground chicken (or turkey)
1/2 tsp salt
1/2 tsp pepper
1 tbsp chicken spice
1 tsp cayenne pepper
1/2 a small onion diced fine
2-3 cloves garlic minced
100g natural ham diced fine
1-2 tbsp honey mustard
1-2 tbsp tomato paste
1 tbsp chicken spice
1 tsp cayenne pepper
2 green onions finely chopped
1/4 c chopped parsely
1 egg
1/2 cup bread crumbs
1/4-1/2 cup grated parmesan

Method:

Sauté the onions, ham and garlic over medium heat until tender and browned slightly.

In a medium bowl, combine the chicken with all the other ingredients (including the onion mixture). Mix to combine evenly (using your hands while messy is the easiest!).

Preheat the oven to 400 degrees F and position the rack in the upper 3rd of the oven. Lightly grease a pyrex or baking sheet (or line with a silpat).

Roll into balls (mine were ~25g each but you can make them any size you would like). If the chicken mixture is sticking - you can either add more panko or bread crumbs (try to avoid doing this) OR wetting your hands (this helps to keep the sticking to a minimum).

Combine the remaining 2 tbsp of tomato paste with 2 tbsp of olive oil and brush overtop of the meatballs as best you can - it doesn’t have to be neat!

Bake in oven for 15-20 minutes or until done. Serve on pasta or as sliders.
